Tia Ginny's Empanada's!

1 lb Ground Chicken/Turkey/Beef
10 oz. Beef Chorizo Sausage
1 Onion Diced Fine
1 or 2 Cloves Garlic Minced
1 pkt Sofrito Seasoning Paste
1 pkt Sazon con cilantro y achote
1 chicken bullion cube dissolved in 8oz hot water
10 oz Green beans finely sliced
Hot sauce to taste
2 cups shredded cheese
2 pkgs Goyo Empanada Disco's

Fry together ground meat Chorizo sausage with onion and garlic.  
Drain the meat and add one pkg sofrito Seasoning paste; one pkt Sazon powder (con cilantro y achote) and very thinly sliced grean beans (fresh grean beans make the best but I have taken a can of beans and drained them well and stuck them in the food processor and it works too) 
Stir everything together and simmer for 3-5 minutes so the flavors can all come together. Add 1 cube of chicken bullion (diluted in a cup of water) and as many shakes of hot sauce as you'd like. Simmer for 30-45 min until it seems thick and yummy.


Drain the final product for the empanada's, but, don't drain it all, as you can eat it over rice just like it is. Fill the empanada's with the drained picadillo, and a bit of cheese and seal the edges with a fork. You can pan fry them or put them in the oven at 425 spray them directly with pam and cook for 15 - 20 minutes.


The "dessert" ones that we do are just filling the empanada dough with nutella or cream cheese, any flavor, and cooking them up. Again, fry or bake, whichever your preference.
